1 pinch of nutmeg
1 lb of pasta gluten-free
Allow the mushrooms to soak at the white wine for approximately 2 hours. Remove mushrooms and set aside the liquid.
Saute mushrooms with onion, parsley, salt, and olive oil.
Boil the water (with salt and olive oil) in a large pan. Once boiling, add the pasta and cook for 8-10 mins.
Melt butter, add all-purpose flour and stir until lightly browned. Remove the saucepan from heat and mix nonstop, adding milk gradually.
Return the pan to the heat, turn the heat up to high and stir until it boils. Lower the temperature, add the braised Funghi, and hydration broth. Stirring and cook 10 for minutes.
Turn off the fire and serve with pasta.
